  • 2 thin tilapia fillets (about 4 ounces) fresh or frozen (times given for both below)
  • Olive oil pump spray not aerosol or 1 tablespoon olive oil
  • ¼ teaspoon salt
  • ¼ teaspoon ground pepper (optional)
  • 2 tablespoons grated Parmesan cheese
  • ½ cup fine dry breadcrumbs

Instructions

Begin by placing the frozen tilapia fillets onto a metal baking sheet, aluminum or stainless steel works best. As your air fryer preheats and you gather your ingredients, the fillets will rest on the metal surface, helping them thaw slightly. This gentle surface thaw creates just enough stickiness for oil and breadcrumbs to cling properly, without requiring full defrosting.

Set your air fryer to 390°F to 400°F and allow it to preheat for 3 minutes. Most air fryers default to this temperature range when using the “air fry” function.

Next, mist the tilapia on both sides with a non-aerosol olive oil spray or brush with regular olive oil. Avoid using cooking sprays that contain propellants, as they can affect the taste and damage your air fryer.

Lightly season the fish with salt, and pepper if desired. Then, sprinkle a generous layer of grated Parmesan cheese over the top side of each fillet.

Pour dry breadcrumbs onto a plate or shallow dish. Gently press each fillet, cheese side down, into the crumbs, then turn and coat the other side. If you find the coating isn’t sticking well, let the fish sit at room temp for another minute or two before reapplying pressure.
