Description

Oatmeal Chocolate Chip Bars are irresistibly chewy treats made with hearty oats and rich chocolate chips that everyone will love.

Ingredients

Scale

Main Base:

  • 2 cups old-fashioned rolled oats
  • 1½ cups all-purpose flour
  • 1 cup packed light brown sugar
  • ½ cup granulated white sugar
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt

Wet Ingredients:

  • ¾ cup unsalted butter, melted
  • 1 large egg, room temperature

Mix-ins:

  • 1½ cups semi-sweet chocolate chips
  • ½ cup chopped walnuts (optional)

Substitution Ideas:

  • Gluten-free: Replace all-purpose flour with 1:1 gluten-free flour blend
  • Dairy-free: Use coconut oil or vegan butter instead of regular butter
  • Vegan: Replace egg with flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and rested for 5 minutes)
  • Lower sugar: Reduce both sugars by ¼ cup each and add 2 tablespoons unsweetened applesauce

Instructions

  • Prepare the Pan and Oven
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang, and lightly grease.

  • Mix Dry Ingredients
In a large bowl, whisk together oats, flour, brown sugar, granulated sugar, baking soda, and salt until evenly combined.

  • Combine Wet Ingredients
In a separate bowl, whisk melted butter, egg, and vanilla until smooth.

  • Make the Dough
Pour wet ingredients into dry ingredients and stir until just combined. The dough should be thick and slightly crumbly.

  • Add Chocolate Chips
Fold in chocolate chips and walnuts (if using) until evenly distributed.

  • Bake
Press dough firmly into the prepared pan. Bake 25–30 minutes, until edges are golden and the center is just set.

  • Cool and Slice
Cool completely in the pan, about 2 hours, then lift out and cut into squares.
