Ingredients
Main Base:
- 2 cups old-fashioned rolled oats
- 1½ cups all-purpose flour
- 1 cup packed light brown sugar
- ½ cup granulated white sugar
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- ½ teaspoon salt
Wet Ingredients:
- ¾ cup unsalted butter, melted
- 1 large egg, room temperature
Mix-ins:
- 1½ cups semi-sweet chocolate chips
- ½ cup chopped walnuts (optional)
Substitution Ideas:
- Gluten-free: Replace all-purpose flour with 1:1 gluten-free flour blend
- Dairy-free: Use coconut oil or vegan butter instead of regular butter
- Vegan: Replace egg with flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, mixed and rested for 5 minutes)
- Lower sugar: Reduce both sugars by ¼ cup each and add 2 tablespoons unsweetened applesauce
Instructions
Prepare the Pan and Oven
Preheat oven to 350°F (175°C). Line a 9×13-inch pan with parchment paper, leaving overhang, and lightly grease.Mix Dry Ingredients
In a large bowl, whisk together oats, flour, brown sugar, granulated sugar, baking soda, and salt until evenly combined.Combine Wet Ingredients
In a separate bowl, whisk melted butter, egg, and vanilla until smooth.Make the Dough
Pour wet ingredients into dry ingredients and stir until just combined. The dough should be thick and slightly crumbly.Add Chocolate Chips
Fold in chocolate chips and walnuts (if using) until evenly distributed.Bake
Press dough firmly into the prepared pan. Bake 25–30 minutes, until edges are golden and the center is just set.Cool and Slice
Cool completely in the pan, about 2 hours, then lift out and cut into squares.
