Ingredients
Main Cookie Base:
- 2 cups granulated sugar
- 1/2 cup whole milk
- 1/2 cup unsalted butter
- 1/4 cup unsweetened cocoa powder
- 3 cups old-fashioned rolled oats
- 1/2 cup creamy peanut butter
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Optional Add-ins:
- 1/2 cup mini chocolate chips
- 1/4 cup chopped walnuts or pecans
- 2 tablespoons shredded coconut
Substitution Ideas:
- Gluten-free: Use certified gluten-free oats
- Dairy-free: Replace butter with coconut oil and milk with oat milk
- Vegan: Use plant-based butter, non-dairy milk, and check that cocoa powder is vegan
- Nut-free: Substitute peanut butter with sunflower seed butter or tahini
Instructions
1. Prep Your Workspace
Line two baking sheets with parchment or wax paper. Set out a spoon or cookie scoop and measure all ingredients so they’re ready to use.
2. Make the Chocolate Base
In a medium saucepan, stir together sugar, milk, butter, and cocoa powder until smooth and lump-free.
3. Boil the Mixture
Heat over medium-high, stirring constantly, until it reaches a rolling boil. Once boiling, continue stirring and boil for exactly 90 seconds.
4. Add Flavorings
Remove from heat and immediately stir in peanut butter, vanilla, and salt until smooth and glossy.
5. Add the Oats
Stir in oats until fully coated and evenly mixed. The mixture should be thick and hold together.
6. Form the Cookies
Drop spoonfuls (about 2 tablespoons each) onto prepared baking sheets while the mixture is still warm.
7. Cool and Set
Let cookies cool at room temperature for at least 30 minutes until firm and set.
