Mini Pop Tarts are irresistibly fun treats with flaky pastry and sweet fillings that bring joy to breakfast or snack time.
Ingredients
For the Pastry:
- 2 cups all-purpose flour
- 1 teaspoon salt
- ½ cup cold unsalted butter, cubed
- ⅓ cup cold water
- 1 large egg (for egg wash)
For the Filling:
- 6 tablespoons fruit jam or preserves (strawberry, raspberry, or apricot work beautifully)
- 3 tablespoons Nutella or chocolate spread (alternative option)
- 2 tablespoons brown sugar mixed with ½ teaspoon cinnamon
For the Glaze:
- 1 cup powdered sugar
- 2–3 tablespoons milk
- ½ teaspoon vanilla extract
- Food coloring (optional)
Substitution Options:
- Gluten-free: Replace all-purpose flour with a 1:1 gluten-free flour blend
- Dairy-free: Substitute butter with cold vegan butter or coconut oil
- Vegan: Use plant-based butter and replace the egg wash with non-dairy milk
Instructions
Make the Dough
Mix flour and salt. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Shape into a disk, wrap, and chill 15 minutes.Roll & Cut
Roll dough ⅛-inch thick. Cut into 24 rectangles (half for bottoms, half for tops).Add Filling
Place 12 rectangles on baking sheets. Add 1 tsp filling to each, leaving a ½-inch border.Seal the Pop Tarts
Brush edges with water. Top with remaining rectangles and press edges with a fork.Bake
Brush tops with egg wash. Bake at 375°F (190°C) for 12–15 minutes until lightly golden.Glaze & Serve
Cool 10 minutes. Mix powdered sugar, milk, and vanilla. Drizzle over pop tarts and let set 5 minutes.
