Ingredients
- 8 oz mascarpone cheese, room temperature
- 1 cup ladyfinger cookies, finely crushed
- 2 tbsp strong brewed coffee, cooled
- 2 tbsp coffee liqueur (optional, can substitute with 1 tsp coffee extract)
- 1/4 cup powdered sugar
- 1 tsp vanilla extract
- 1/4 cup unsweetened cocoa powder
- 1/4 cup dark chocolate chips, melted
Instructions
Prepare the base: In a large mixing bowl, whip the mascarpone cheese until it’s smooth and creamy.
Add flavor: Mix in crushed ladyfingers, coffee, coffee liqueur (if using), powdered sugar, and vanilla extract until well combined.
Form the truffles: Scoop out portions of the mixture with a small cookie scoop or spoon, then roll into 1-inch balls and arrange them on a parchment-lined tray.
Chill: Refrigerate for 30 minutes to help the truffles firm up.
Melt the chocolate: While chilling, melt the chocolate chips in 30-second intervals in the microwave, stirring between each until smooth.
Dip the truffles: Dip each chilled ball in melted chocolate and let the excess drip off before placing them back on the tray.
Finish and chill again: Dust with cocoa powder and refrigerate for another 30 minutes, or until chocolate is fully set. Serve chilled.
