Ingredients
For the Brownies:

- 8 oz dark chocolate, chopped (or 1 1/3 cups dark chocolate chips)
- 3/4 cup granulated sugar
- 1/4 cup brown sugar, packed
- 3 large eggs, room temperature
- 1 teaspoon vanilla extract
- 3/4 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/2 teaspoon salt

Substitution Options:
- Gluten-free: Replace all-purpose flour with 1:1 gluten-free baking flour

- Refined sugar-free: Substitute coconut sugar for both granulated and brown sugar
- Egg-free: Replace each egg with 1/4 cup unsweetened applesauce
Instructions
Prep the Pan and Oven
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment, leaving overhang, and lightly grease.
Melt the Chocolate
Microwave butter and chopped chocolate in 30-second intervals, stirring until smooth. Let cool for 5 minutes.
Mix Wet Ingredients
Whisk sugars into the chocolate mixture. Add eggs one at a time, mixing well after each. Stir in vanilla until glossy.
Add Dry Ingredients
Whisk flour, cocoa powder, and salt in a separate bowl. Gently fold into the chocolate mixture just until combined.
Bake
Spread batter evenly in the pan. Bake 25–30 minutes, until a toothpick comes out with a few moist crumbs and the top looks set but slightly shiny.
Cool Completely
Cool brownies in the pan for at least 2 hours so they cut cleanly.
Cut Heart Shapes
Lift brownies out using parchment. Cut with a heart-shaped cookie cutter. Re-roll scraps to cut more hearts or save for snacking.
