Ingredients
For the Base Layer:
- 2 cups plain Greek yogurt (full-fat preferred for creaminess)
- 3 tablespoons natural peanut butter (smooth or crunchy)
- 2 tablespoons pure maple syrup or raw honey
- 1 teaspoon vanilla extract
- Pinch of sea salt
For the Topping:
- 2 tablespoons mini dark chocolate chips (70% cacao minimum)
- 1 tablespoon crushed peanuts
- 1 tablespoon coconut flakes (optional)
Instructions
In a mixing bowl, whisk together Greek yogurt, peanut butter, maple syrup, vanilla extract, and sea salt until smooth and mousse-like.
Line a mini muffin tin with paper liners or lightly grease silicone molds with coconut oil.
Spoon the mixture evenly into the prepared molds.
Sprinkle each bite with mini chocolate chips and chopped peanuts.
Freeze for at least 2–3 hours or until completely firm.
Once frozen, remove bites from molds by gently twisting or peeling away liners.
