    • 4 large eggs, separated

    • 50g unsalted butter

    • 60ml heavy cream

    • 50g granulated sugar

    • 1 tsp vanilla extract

    • Pinch of salt


Instructions

  1. Melt the dark chocolate and butter together in a heatproof bowl over simmering water. Stir until smooth, then let cool slightly.
