Ingredients
Cookie Base
- 2 cups all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 8 oz dark chocolate (70% cocoa), chopped
- 1/2 cup heavy cream
- 2 tablespoons butter

- 1 cup pistachios, roughly chopped
- 1/4 cup pistachios, finely ground
- Flaky sea salt for finishing

Instructions
Prepare the Ganache
Heat cream until just simmering, then pour over chopped chocolate. Let sit 2 minutes, stir until smooth, then mix in butter. Refrigerate at least 2 hours until firm.Make the Cookie Dough
Whisk flour, cocoa powder, baking soda, and salt. In another bowl, cream butter and sugars until light and fluffy, about 3 minutes.Combine Ingredients
Beat in eggs one at a time, then vanilla. Gradually add dry ingredients until just combined. Fold in chopped pistachios.Fill and Shape Cookies
Scoop 2 tablespoons of dough and flatten slightly. Add a small spoonful of ganache to the center, wrap dough around it, seal, and roll into a ball. Place on parchment-lined baking sheets, spacing 2 inches apart.Chill and Bake
Chill cookies for 30 minutes. Preheat oven to 350°F (175°C) and bake 10–12 minutes, until edges are set but centers are still soft.Finish and Cool
Sprinkle with ground pistachios and flaky sea salt while warm. Cool on the pan for 5 minutes, then transfer to a wire rack.
