Description

Chocolate Energy Date Balls are rich, no-bake snacks made with dates, almonds, and cocoa powder. Naturally sweetened and packed with fiber and healthy fats, they’re perfect for quick energy, meal prep, or a healthier chocolate craving.

Main Base:

  • 2 cups pitted Medjool dates (about 1214 dates)
  • 1 cup raw almonds
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons chia seeds
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon sea salt

Optional Add-ins:

  • 2 tablespoons mini dark chocolate chips
  • 1 tablespoon almond butter or peanut butter

For Rolling:

  • 2 tablespoons cocoa powder
  • 2 tablespoons shredded coconut
  • 2 tablespoons finely chopped nuts

Dietary Substitutions:

  • Nut-free: Replace almonds with sunflower seeds or pumpkin seeds
  • Vegan: This recipe is naturally vegan as written
  • Gluten-free: All ingredients are naturally gluten-free
  • Lower sweetness: Use only 1.5 cups dates and add extra nuts


Instructions

  • Soften Dates (if needed)
    If dates are dry, soak in warm water for 10 minutes. Drain well and remove pits.

  • Chop Almonds
    Pulse almonds in a food processor until roughly chopped. Remove and reserve half.

  • Make the Base
    Add remaining almonds, dates, cocoa powder, chia seeds, vanilla, and salt to the processor. Blend until a sticky mixture forms.

  • Add Texture
    Pulse in reserved almonds and optional add-ins (chocolate chips or nut butter) just until combined.

  • Shape
    Roll mixture into 16–18 small balls. Lightly dampen hands if sticky.

  • Coat & Chill
    Roll balls in cocoa powder, coconut, or chopped nuts. Chill for 30 minutes if desired.

Notes

Texture fix: Too dry? Add 1 date at a time. Too sticky? Add nuts or cocoa powder.

Make-ahead: Flavor improves overnight; great for meal prep.

Storage: Refrigerate up to 2 weeks or freeze up to 3 months.

Variations: Add protein powder, cinnamon, espresso powder, or swap nuts for seeds.
