Ingredients

For the Dough:

  • 3/4 cup warm milk (110°F)
  • 1/3 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 3 1/4 cups bread flour
  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast

For the Filling:

  • 1/3 cup unsalted butter, softened
  • 2/3 cup packed light brown sugar
  • 2 tablespoons ground cinnamon
  • Pinch of salt

For the Cream Cheese Glaze:

  • 4 oz cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 1 1/2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 23 tablespoons milk

Substitution Options:

  • Gluten-free: Replace bread flour with a 1:1 gluten-free flour blend designed for bread making
  • Dairy-free: Use plant-based milk and vegan butter alternatives
  • Egg-free: Substitute with 1/4 cup unsweetened applesauce or aquafaba

Instructions

1. Make the Dough (Bread Machine)
Add warm milk, melted butter, and egg to the bread machine pan. Add flour, sugar, and salt on top, then make a small well and add the yeast (keep it separate from the liquid). Run the dough cycle (about 90 minutes).

2. Make the Cinnamon Filling
Mix softened butter, brown sugar, cinnamon, and a pinch of salt until smooth and spreadable.

3. Roll the Dough
When the dough is ready, place it on a lightly floured surface. Roll into a 12×18-inch rectangle with straight edges.

4. Fill and Cut
Spread the cinnamon filling evenly over the dough, leaving a 1-inch border on one long edge. Roll up tightly from the opposite side and pinch the seam closed. Cut into 12 equal rolls (about 1½ inches each).

5. Second Rise
Place rolls in a greased 9×13-inch baking dish with small spaces between them. Cover and let rise for 45 minutes until puffy and almost touching.

6. Bake
Preheat oven to 375°F during the last 15 minutes of rising. Bake for 25–30 minutes until golden brown and cooked through (190°F inside).

7. Make the Glaze
Beat cream cheese and butter until smooth. Gradually mix in powdered sugar, vanilla, and enough milk to create a smooth, pourable glaze.

8. Glaze and Serve
Let rolls cool for 5–10 minutes, then drizzle generously with glaze. Serve warm.
